A Dish from Brazil:


This time in "Cuisine of the World," we explain how to make the dish from Brazilian cuisine, "Churrasco."

We visited the "Barbacoa Classico" restaurant located in Marunouchi with Kiyoharu Ito and Yoshisato Esaka, who both joined Marubeni in the same year.

Mr. Ito lived and worked in São Paulo for Marubeni for 5 and a half years, while Mr. Esaka was born and raised in Brazil. They are both united in their response as to what the great appeal of Brazil is, however: they say it is the "fusion of diverse cultures." In addition to its aboriginal peoples, Brazil is a country composed of immigrants from all across the world, including Europe, Africa, the Middle East and Asia, which makes it a land where people respect each others' different cultures and everyone mixes in together. The people of Brazil are rich in both pioneering spirit and a flexible outlook, and the country has produced many people who have gone on to make active contributions in the world arena.

Another point of appeal is the open-minded and friendly Latin American nature of the people of Brazil. Brazilians treat women, children, and the elderly with great kindness. Mr. Ito once witnessed an incident in the street where an old lady had dropped a bag of oranges she was carrying and they started to roll away in all directions. People all around started running after the oranges to gather them up for her. Mr. Ito says this is the sort of human warmth that he loves about Brazilians.

The land area of Brazil is about 23 times that of Japan. While the northern part is located in a sub-tropical zone, winter comes to the southern part. The climate, culture and environment are also diverse, and because the types of food materials that can be produced vary according to region, there is also great diversity in the food culture, says Mr. Esaka.

However, even given this situation, "Churrasco" is a representative and popular Brazilian meat dish. According to Mr. Esaka, it is primarily a dish eaten in the South and is an essential menu for when large numbers of people get together to celebrate something or when family and friends gather for lunch at the weekend. It is a very simple dish, but this simplicity allows you to savor the flavor of the meat itself.

In addition, "Churrasco" does not have to be eaten as a formal meal, but it is a dish that can also be enjoyed casually. It is often sold at food stalls, etc. located around stadiums when a soccer match is being held, and. Mr. Ito says that he too used to often have "Churrasco" wrapped in some bread and a beer to keep him going before he entered the stadium to watch a soccer match in Brazil.

Brazilians love big gatherings and place great importance on interacting with other people. "Churrasco" is a perfect dish for these sorts of buzzing occasions when people gather together to have fun.

Brazil and Marubeni

Marubeni and Brazil have a long history, with a relationship that has been maintained for over 55 years, since Marubeni opened its São Paulo office in 1955. As well as being one of the world's foremost resource countries, it has maintained remarkable economic growth based on robust domestic demand. Currently, Marubeni is involved in businesses in a wide range of fields, from food (cereals, chicken, coffee, etc.), metals (iron ore, ferronickel, etc.), pulp, chemicals, aircraft, machinery, etc., to various sorts of infrastructure related businesses such as export of plants, railways, and communications.

How to Make "Churrasco"

* This is a dish which can be eaten by large numbers of people together by cutting up the chunks of meat with a large knife and eating them as they are or seasoning them with sauce or lemon.
* It is possible to make it at home using an oven, but in the spring or summer months, we also recommend barbecuing it over a charcoal fire.

How to Make

    Step 1: Cut up and divide the meat. The size depends on your preferences, but each piece of meat in the picture is around 2kg.

    Chef's Tip:

    We recommend using red meat which has relatively little marbling in order to bring out and enjoy the natural flavor of the meat.

    Step 2: Put the meat onto a skewer. 3 pieces of meat on 1 skewer will feed about 10 people. The cuts of meat mainly used are aitchbone or skirt steak, which can occasionally be found in supermarkets these days, or are available to buy online.

    Step 3: Sprinkle the meat with salt. Rub the salt in well to the entire surface of the meat. We recommend using rock salt because it brings out the flavor of the meat better than normal salt can.

    Step 4: Cook the meat. Do not use any oil. Turn over the meat several times as it cooks in order to remove any excess fat.

    Chef's Tip:

    If using an oven, pre-heat to over 200 degrees Celsius and cook for about 30 minutes, or until the surface becomes crispy.
